Grown and pressed entirely in California, so the origin is one traceable source rather than a blend of imported oils, at an everyday price. Check the date printed on the bottle when it arrives and finish it within a couple of months of opening.

The everyday fat in our starter guide, and the one with the strongest evidence behind it. It dresses salads, finishes cooked vegetables and turns a plain piece of fish into dinner.
What to look for
- A harvest date on the bottle, ideally within the last eighteen months
- Dark glass or a tin, since light makes olive oil go stale
- A single country or region of origin rather than a blend of EU and non EU oils
- A third party quality seal such as the California Olive Oil Council or a PDO mark
How to use it
Keep a good bottle for dressings and drizzling, where you can taste it. For high heat searing, avocado oil or ghee are the better tools. Store the bottle away from the hob and finish it within a couple of months of opening.

The catch
Good olive oil is expensive and a lot of cheap bottles labelled extra virgin fail independent quality tests. Spend on the bottle you drizzle and use a cheaper oil for frying.
