The dairy free stand in for cream. It makes curries rich, thickens soups and turns chia seeds into a proper breakfast, all for a couple of grams of net carbs per serving.
What to look for
- Full fat, usually around 17 to 24 percent fat, not light or reduced fat
- Coconut and water as the main ingredients, with few or no gums
- No added sugar, which some dessert style cans include
- Coconut cream if you want an even thicker result for whipping
How to use it
Shake the can before opening, since the cream separates. Leftovers keep three to four days in a jar in the fridge, or freeze them in an ice cube tray for coffee and sauces.

The catch
It is very calorie dense and easy to pour freely into curries and coffee. Some cans also use BPA lined tins or added gums, so read the label if those matter to you.
