Chia Seeds
Chia Seeds
Viva Naturals Organic Chia Seeds, 2 lb
Whole organic seeds in a resealable two pound bag, which is where the price per ounce drops. Whole seeds keep for a long time, so the larger size is not wasted.

Almost all of the carbohydrate in chia is fibre, which makes it one of the few seeds that fits comfortably into a keto day. Soaked overnight it turns into a pudding that covers breakfast.
What to look for
- Whole seeds rather than milled, since they keep much longer
- Black or white, which taste the same and differ only in looks
- A resealable bag of at least a pound, because the price per ounce drops fast
- Organic if you prefer it, usually for a small premium
How to use it
Mix about three tablespoons into a cup of unsweetened almond or coconut milk and leave it in the fridge overnight. Drink plenty of water alongside, since the seeds absorb many times their weight.

The catch
The texture of chia pudding is a dealbreaker for some people, and a lot of fibre at once can upset your stomach in the first week. Start with a tablespoon rather than three.
